    As used by Ferran Adrià at El Bulli, these transparent edible sheets are made from potato starch, soy lecithin and sunflower oil. The obulato doesn't contain salt, sugar or gluten which makes them suitable for celiacs. They are ultrafine and transparent with neutral taste and smell. You can do almost anything with them and a bit of imagination! Sweet or savoury – let your creative juices run riot!

    We supply Obulato in sheet form (round and square), cups and cones.

    The edible film discs do not dissolve when in contact with oil or liquid ingredients with low water content. They can be used with a wide variety of ingredients like crèmes, praline, flavoured oils, honey, foie gras, prosciutto, Nutella, dried fruits and vegetables, cereals, fresh fruit and vegetables brushed with oil, fried fish, meat or seafood and many other ingredients with low water content. The edible film disks can be cut with regular scissors to obtain any desired shape and can be sealed by applying heat with a sealer.

    Put isomalt caramel powder on them, sprinkle some pop rocks, in the oven for 3 seconds and you can mould them to any architectural shape you can!
