Hand squeezed Yuzu Juice 900ml by Ito Farm - Cold pasteurised - no salt or vinegar
The amazing Yuzu fruit produces an very aromatic juice that resembles grapefruit, with strong overtones of mandarin (and a touch of cumquat). It is absolutely delicious and adds a complete new dimension - both flavour and aroma to dishes. You have to try it to understand what a wonder ingredient this is!!
This is one of the hottest new ingredients around and our Yuzu Juice is very different to the competition! Yuzu fruit looks somewhat like a very small grapefruit with an uneven skin, and can be either yellow or green depending on the degree of ripeness. Yuzu fruits, which are very aromatic, typically range between 5.5 and 7.5 cm in diameter, but can be as large as a grapefruit (up to 10 cm or larger).
There are two ways most juices are squeezed by commercial manufacturers (not concentrate which is a further inferior quality level). The "in line" method is where the whole fruits with skin are press-squeezed and the skin is removed afterwards by centrifugation. Unfortunately with this method, some components of skin remains in the juice which gives astringent and murky flavour. The other way some manufacturers make juice is by the "Chopper-Pulp" method - The fruits is boiled to separate the outer skin and then peeled and press-squeezed which has the same drawbacks to flavour. And Yes if its of interest - We do already and can supply this in bulk for manufacturers.
The Ito-Farm Yuzu juice we supply is very special in that it
squeezes fruit this way:
• To supply a genuine juice of real Yuzu Ito Farm developed
an original squeezing method which is all done BY HAND.
• In order to avoid both outer skin and inner skin getting
into the juice, Ito Farm first cut the citrus into half. Then the citrus is put
onto a hemispherical mould and gently pushed with another hemispherical bowl to
squeeze the juice. The juice then immediately put into a chiller to maintain
its freshness and nutrition.
• The skin after the squeeze still remains its original
shape as it is not pressed too hard.
While normal 100% straight juice is very thick, the Ito Farm original
method enables to produce pure juice only from the flesh pulp which has very
refreshing taste (and no bitterness from the pith). Of course no sugar, additives or any
preservatives are used.
• The popular In-Line method and Chopper-Pulp method can get
juice about 50-65% of original fruits, this squeeze method can only get about
30% of juice from the original fruit.
This quality makes all the difference in your cooking as there is no bitterness from the fruit pith. We think its the highest quality Yuzu juice available.

Yuzu - Oyster or dipping sauce * (*highly recommended)
25ml Master craftsman rice vinegar
50ml Yuzu juice
75ml Yuzu syrup
Put syrup, salt and vinegar in a saucepan and bring to the boil. Take off the heat and add Yuzu juice.
Japanese Yuzu vinaigrette
4 tablespoons - Ito Farm Yuzu Juice
3 tablespoons - Salad Oil (vegetable good quality)
Soy sauce to taste
A little wasabi
Blend oil, soy sauce and wasabi together and then add the Yuzu juice. Add sugar to achieve a gentler taste.
