Ume Kosho 80g - ume plum (29.65%), green chilli pepper (19.87%) and red shiso (11%)
plums, called Nanko ume, have been fermented in a mix of salt and spices,
stoned and ground with hot green peppers in vinegar. The bright purple paste is delicious, strong
with a beautiful purple colour. It is clean on the palate and cuts through fat.
Use with mayonnaise, basted on fatty skins, prawns, in sauces and much more! This is not sweet as Ume Plums are not sweet but very sophisticated flavour.
